2 cups Twice Rice cereal (Whole Foods sells this; can also sub. GF puffed rice cereal)
1 cup GF oats (normal brands of oats are usually not GF, but Bob's Red Mill brand is)
2 cups millet flakes (sub. quinoa flakes if you can find them)
1 cup GF corn flakes (or just use another cup of above)
1 cup crunchy flax cereal (if not available, sub. more oats or rice cereal)
1 cup almonds, chopped finely
1 cup sunflower seeds

1-2 Tablespoons honey
1-2 Tablespoons canola oil

1 cup dried currants
1 cup finely diced dried apple

Preheat oven to 90 or absolute lowest setting. Combine honey and oil in a small saucepan and heat until boiling. Put all other ingredients except fruit in a roasting dish, drizzle over the oil/honey mix. Bake for 2 hours, stirring every 30 minutes. Add fruit, mix well, and turn off the oven to cool down.

Makes about 11 cups. Store in airtight container, or bag and store in the fridge/freezer to keep fresh.
